Banh Bao Brothers bring Vietnam to Waterloo – authentic flavours with a fresh urban twist

Vietnamese restaurant and cocktail bar bring old country flavours and folk tales, wrapped in a cool new urban style, to redeveloped Leake Street Arches, Waterloo.

The first phase of London’s new Leake Street Arches – eight resurrected railway arches leading into the Banksy-blessed Graffiti Tunnel under Waterloo Station – is about to be launched, featuring the independent Vietnamese restaurant and cocktail bar, Banh Bao Brothers.

Offering inventive authenticity with contemporary style, and shunning the normal Vietnamese pho found elsewhere in the capital, Banh Bao Brothers serves lunches and dinners of noodles and Banh Baos, together with a wide range of Vietnamese inspired cocktails.

Co-owner Chris Evernden says: “There’s a wider variety of noodles in Vietnam than anywhere else in the world and we’ll be offering some of our favourites, with more to be rotated as specials.  We have familiar and new flavours, all with a twist, vigour and freshness you never knew they had.”

The restaurant’s core dish is the Banh Bao – the Brothers’ take on the traditional Vietnamese breakfast bao that can be eaten at any time of day. Chris continues: “The traditional Banh Bao is a steamed dish made with minced pork, Chinese sausage and a quails egg. Like all our dishes, every part of it – including the bao – is made from our own recipes, in homage to tradition, and we’ll be offering our own distinctive flavours as well as the time-honoured ‘OG’ bao.”

Those flavours are the inspiration of Chris’s business partner, head chef Raymond Ly. Chris and Ray grew up together like brothers, hence the name, with Ray’s childhood also steeped in a passion for cooking inherited from his celebrated grandmother, Madame Bay.

Chris says: “The history of food is written by grandmas and we think we’ve got the best. Madame Bay’s secret recipes were crafted with care, love and a healthy dose of cheekiness to provide daily banquets for her 13 children. Ray was the last of her students and is now a renowned and sought-after chef in the Vietnamese community."

Along with the food come plenty of cocktails, influenced by old country flavours and served in the welcoming neon hue of the Jade Dragon Bar, where an ancient folk tale of the kiss of the jade dragon inspires both the coolest of décors and the house cocktail, the eponymous Jade Dragon Kiss.

Banh Bao Brothers is the first restaurant to open in the Leake Street Arches, initiating a new “curated collection of independent restaurants and bars that capture the essence of urban culture.” (1) It is just on the edge of the graffiti tunnel and continues the neighbourhood theme inside with artworks by three big graffiti names. It is open Monday-Saturday from noon, with meals served until 10.30pm, then snacks and late drinks until midnight Monday-Thursday and 1.00am Friday and Saturday.

At the Leake Street Arches all-day first phase launch, Banh Bao Brothers will offer a roll-a-dice game with rewards of meal discounts and even free food and drink.
